Nils Noren

Our Concept studio is led by Nils Noren, who is also our co-founder. Nils is a celebrated chef director, and educator with a strong background in concept development at scale. Nils sits on the Board of Directors for Gohan Society, as well as the Culinary Board for the Museum of Food & Drink.

After helming Aquavit, Nils was Vice President of Culinary and Pastry Arts at the International Culinary Centre. In 2010, Nils joined Marcus Samuelsson Group (MSG) as Vice President of Restaurant Operations, where he managed and restructured the business, including Red Rooster Harlem. During his time at MSG, Nils headed up negotiations, concept development, and the opening of over 20 restaurant operations for the group domestically and internationally, including a multi-brand Joint Venture with Clarion Hotels Scandinavia and a restaurant for the group at The Hamilton Princess Hotel Bermuda. Today, Nils continues with Trade & Union clients to realise creative F&B and hospitality concepts.
